My sweet pepper and sweet potatoe soup . Easy to make and yummy !
4 or 5 peppers I normal using the sweet ones mixed with a couple of green ones sliced these up with a couple of sweet potatoes lay in a roasting tray and drizzle in virgin olive oil , roast for half hour .
Fill a saucepan with vegetable stock and water bring to the boil and then scoop in the roasted vegetables with a tea spoon of chilli flakes bring back to the boil and then let simmer for 20 minutes on a low heat.
Then just blitz with a hand blender makes a really nice filling thick soup ! the chilli gives it a bit of a kick so you can add as much as you can handle.....

Enjoy I quite often make this in batches and freeze it to take to work for lunch yummy ......
